002 GRIEVING FLAVORS
When we think of the word “extinct”, we tend to think of endangered animals, not brownies or banana bread. But climate change doesn’t only threaten wildlife – it also affects the plants we rely on every day, and our beloved cacao, coffee and bananas are on the frontlines of the crisis.
002 PROJECT DESCRIPTION:
“Grieving Flavours” is an exploration project that combines scientific research, historical evidence, personal interviews and hands-on cooking experiments – a response to the escalating climate crisis, radically reshaping what and how we eat in the future. It uses desserts – one of the most emotionally charged forms of food – to navigate food transitions and explore loss, adaptation and cultural continuity. From that emerged a new collection of dessert recipes designed specifically for a future shaped by heat, drought, and limited resources. These recipes rely on sustainable, climate-resilient, and often ancient ingredients. All of this is documented in a publication that weaves together recipes, climate data, ingredient maps and personal testimonies, grieving what we are losing and also imagining new forms of care through food.
